Whole Grain Quesadillas

A quick and simple dinner when you don't have a lot of prep time.  When time allows I prefer to grate my own cheeses, cook and shred the chicken and make my own homemade salsa and guacamole.  However at the end of a long and busy work week when we want something good and fast this is an easy meal to make with fresh ingredients that we can easily pick up at the supermarket. Our supermarket has a wonderful selection of rotisserie chickens and a fresh and delicious assortment of salsa and guacamole so it makes making this dish as simple as 1-2-3!

 

 

INGREDIENTS:

While Grain Tortillas

Trio of Shredded Cheeses ( we used Mexican blend)

Rotisserie Chicken

Fresh Salsa

Fresh guacamole

 

Heat up a non-stick pan. Take all of the meat off the bones of the rotiseeiere chicken and set aside.  Add one of the whole grain tortillas to the pan to heat and carefully layer a small amount of cheese over the tortilla.  Add some of the chicken on top of the cheese and then a light sprinkle of cheese over the chicken and cover with the other tortilla.  Carefully turn over the tortilla trying not to let the cheese and chicken spill out so that you can heat the top tortilla.  When the cheese is melted and the tortilla has been heated and it starting to brown take remove the quesadilla to plate and cut into quarters. 

 

Although you could add the salsa and fresh avacado slices to the quesadillas, I prefer to add them fresh on the side so we can dip the quesadillas in the salsa and guacamole or place a little on each before eating.
