Summertime always reminds me of vegetables and fruits fresh from my dad's gardens. One of my favorites is a simple salad of fresh cucumbers and tomatoes right from the garden. My father would often use his own homemade vinegarand sometimes fresh lemon, which is what I prefer.
And lets not forget the crusty Italian bread for dipping in the dressing or fill a with the salad and make it a meal in itself.
Ingredients:
3 cucumbers, peeled and cut into chunks or 6 small cucumbers cut in rings
4 Roma tomatoes cut into chunks or a cup of grape tomatoes sliced in half
1/2 red onion, sliced in thin wedges or chunks
Garlic powder, oregano & salt and pepper to taste
1/2 cup Extra Virgin Olive Oil
1/3 cup Fresh lemon juice or red wine vinegar
Cut the cucumbers, tomato's and red onion and place in a bowl. Add a light sprinkle of garlic powder and dried oregano over the salad, drizzle with the olive oil and fresh lemon (or vinegar), toss and add salt and pepper to taste.
I also often make this salad using only olive oil and maybe a touch of lemon juice and I omit the garlic powder and oregano altogether. I have also omitted the oregano and substituted with chopped fresh basil or mint. And when I can find them fresh in the market or farmers stand I use heirloom tomatoes.
