After a long day at work and then a run to the supermarket to pick up fruits and veggies for a 3-Day Refresh the following week I needed to make something healhty and quick for dinner to stay on track with Day 19 of the 21 Day Fix. Enter a quick take on Shrimp Scampi without the pasta.
Ingredients:
Jumbo Shrimp, peeled, deveined with tails off
Fresh Baby Spinach, washed and dried
Garlic,chopped
White Wine
Himalayan Sea Salt
Olive Oil
Brown Rice
Start by making the brown rice, pretty simple, follow the directions according to the package. You want to get this started as the rice takes a bit of time to cook and the rest of the dish is pretty easy to put together.
I purchased frozen raw jumbo shrimp that was deveined. If the shrimp is still frozen place them in some water to soften them up so you can peel them and take off the tails. Once all the shrimp are peeled set them aside.
I used 3 cloves of garlic, chop the garlic and set aside.
In a non-stick saucepan drizzle a small amount of olive oil. I don't measure but it amounts to 2 tablespoons of olive oil. Heat the oil on low and add the garlic, stir and be sure to watch closely so the garlic does not burn, you simply want to saute the garlic.
Add the spinach and continue to sautee the spinach with the oil and garlic, you may have to add the spinach in batches and adding more spinach to the pan as it wilts.
Once the spinach has wilted, add the shrimp and a generous pinch of sea salt and a 1/4 cup of white wine. Stir and continue to saute the shrimp in the garlic wine sauce and spinach until cooked and then remove from the heat.
Once the rice is cooked you are ready to plate.
I use my yellow 21-Day Fix container to measure out the rice and then invert it on the plate for that little box look! If you are following the 21-Day Fix measure out the shrimp and the spinach in accordance with your individual plan.
